Washed coffee is fermented and rinsed clean of its fruity mucilage before drying. This often results in a cleaner, more acidic cup—think citrus, floral, or tea-like notes. On the other hand, natural coffee dries with the fruit still on the bean, soaking in sugars and wild flavors. The result? Sweet, berry-rich, or chocolatey coffee that’s full-bodied and complex.
